Chocolate chip yogurt muffin

Have you tried making muffin using yogurt? It lowers oil used but still have the fluffiness of cake.

1 1/2 cup all purpose flour
1/4 cup coconut sugar
1 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1 cup yogurt (low fat or others)
2 1/2 tbsp oil
1 large egg
1 tsp vanilla

1. Mix top 5 ingredients together in a large mixing bowl.
2. Mix last 4 ingredients in a separate bowl and mix together
3. Fold wet into dry. Do not overmix.
Optional: mix chocolate chips into the mix. (Or add frozen blueberries, cherries, or coconut, cranberry, etc. )
4. Bake at 350F in 6 extra large muffin tin, or bread loaf, or 8×8 cake pan. Adjust timing according to size of pan.
Good idea to start with 20min. Top should be golden brown.
