Homemade gummy

Fun to make with little ones. Can be mold to any shape silicon mold.

Ingredients:
1/4 cup corn syrup
1/2 cup cold water
2 packages of plain gelatin
1 package of flavored jello (used raspberry)
Oil to grease mold

1. Measure water in measureing cup. Add in corn syrup. Stir until clear. Pour into a pot. Add gelatin and jello powder and srir slowly. Melt in low medium heat until it liquidify.

2. Pour into measuring cup (with spout). If foam or lump appears, pour in a tall glass and cool until top foam layer can be removed by spooning it out

3. Spray thin layer of oil to silicon mold. Pour gummy mixture into mold and refridgate to become firmer

Chocolate chip yogurt muffin

Have you tried making muffin using yogurt? It lowers oil used but still have the fluffiness of cake.

1 1/2 cup all purpose flour
1/4 cup coconut sugar
1 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1 cup yogurt (low fat or others)
2 1/2 tbsp oil
1 large egg
1 tsp vanilla

1. Mix top 5 ingredients together in a large mixing bowl.
2. Mix last 4 ingredients in a separate bowl and mix together
3. Fold wet into dry. Do not overmix.
Optional: mix chocolate chips into the mix. (Or add frozen blueberries, cherries, or coconut, cranberry, etc. )
4. Bake at 350F in 6 extra large muffin tin, or bread loaf, or 8×8 cake pan. Adjust timing according to size of pan.
Good idea to start with 20min. Top should be golden brown.

Sweet potato ginger dessert soup

Classic Chinese dessert soup that give a warm filling feeling.

Ingredients:
Water
Yam (large cubes)
Ginger (sliced)
Chinese brown sugar

1. Boil everything in a pot until yam is soften. Served warm.

Low fat Banana muffin

2 cup all purpose flour
1/2 cup coconut sugar
1 tsp baking soda
1/2 tsp salt
1 large egg
4 lightly chopped ripped banana
2 tbsp olive oil
1 tsp vanilla
1/2 cup yogurt

1. Mix dry ingredients together (first 4 on the list)
2. Mixed the rest of ingredients in a separate bowl.
3. Pour wet to dry ingredient and fold until combine. Do not overmix; stop when dry ingredients are no longer seen
4. Put dough in lightly greased muffin pan. Bake at 350F for 20-30min (depends on size of muffin.

Yield: 6 extra large muffins

Kale egg fried rice vermicelli

Ingredient:
Kale
Fried egg
Red hot pepper
Onion
Rice vermicelli (soaked and separated)
Sauce ( I had some left over gravy)

East Indian dinner: naan bread

Whenever I have a second (on the weekend), I try to prepare a big east Indian meal. Even though the curry are from a spice mix, or sauce in a jar, they are still one of my household favorite. I did however made the naan bread from scratch. After trying a few recipe, I finally found a keeper.

2 portions: 4-6 ppl
Ingredient:
2 tsp yeast
2 tsp sugar
1 1/2 cup warm water (100F)

4 cup all purpose flour
2 tsp sugar
2 tsp salt
1/2 tsp baking powder
6 tbsp (90ml) yogurt
4 tbsp oil

1. Put yeast, sugar, and water in a glass container and let it foam (10min)
2. In a mixer, put flour, sugar, salt, and baking powder in the mixing bowl
3. Pour yeast mixture, along with oil and yogurt with dry ingredient. Knead with dough hook
4. Proof in warm environment for 2-3 hrs.
5. Punch dough down. Grab a small hand full of dough and roll into a round shape, about 0.5cm thick
6. Put drop of oil in a non stick pan. With medium heat, put rolled dough into pan. Wait until bubble rises. Once golden color, turn over. Press down with spatula to let air in bubble out. Done when both side is golden.

Another green juice. This one is good. The orange does wonder.

6-8 kale
8 chard leaves
1 cucumber
3 oranges
2 celery stalk
1 lime

Juicing: Life’s a garden

This is juicing day 3. This juice is quick salad like again. I couldn’t get organic tomato. I think it would be much sweeter if my tomato were organic.

Life’s a garden:

4 tomato
1 cucumber
3 celery stalk
2 cup parsley
1 lime
